Young squirrels I season, roll in flour, dip in a mix of egg and milk, flour again and fry in hot grease. Mashed potatoes, gravy and corn on the cob. Old ones go in the stew pot.

Salt and pepper the young ones and roll in flour and fry them on medium heat. The old ones boil them adding salt and pepper to the water until the meat falls off the bone. I usually just start eating at this point but if you have the patients Remove the meat from the pot and after it cools de-bone the meat. Return the meat back to the pot and make a pot of dumplings. Next to pork squirrel meat is my next favorite.

Can't wait to try some of these recipes. We usually just put it in the pressure cooker because it's so tough.
