Thank you sir, I wanted my gravey a pinch thicker but I didn't have enough roux made up. However sitting on them steam wells "slow cooks" it anyway so it will be fine.
do you know how to make scallopped potatoes I love them ha ha
Yessire, if I have time tomorrow at work I will. We have some potatoes that need used.
Well no potatoes tonight as I had other food that needed ran prior to the potatoes. But I did get about 25lbs thinly sliced and when I get back from break I'm going to stage them for tomorrow.
Here you go Wesley, I know they don't look pretty but man they taste good!

Oh of course, always safety first. I have heard alot of horror stories and seen a few.... bad cuts, burns, loosing digits, etc.... the kitchen can be brutal.
I worked in a butcher shop and wasn't trained on the slicer. I was doing a roast on it one day and saw blood and noticed I was missing the end of my thumb. It was so sharp I didn't feel it. It just missed the bone. Luckily my body grew back the portion of thumb I cut off but I was scared of the slicer ever since
Mmmmmm collard greens......
