I know that manufacturers will be different, but as a general rule should you "size to fit" or go up one size?

I finally found some camo waders I think I can live with, a Stearns product. Any experience as to how their sizing generally goes?

I get the size to fit. I got the insulated ones from B/P, so I don't really need alot of extra room underneath.

Where I will be using them most, climbing over boulders, logs, up water falls, and such is the norm.

    I am concerned about mobility.

I wear a 10 1/2 sneaker, I have a 30" inseam and Im 5 10.5". I got hip boots and had to take an 11. They are tight in the leg but the foot fits right. They're cabelas brand. You should try them on till you find the right fit Theres to many variables.

I am going for the stocking foot breathable chest waders in camo and can't find any local to try on.

An educated guess is going to have to do.
