stuffed baking hen

    i just got a package from the butcher and one of the things in it was a stuffed baking hen. does anybody have a good recipe for this or a suggestion on sides? we have never had one they are a little pricey for us. thanks

    Preheat oven @ 325.. Rub down the hen with some olive oil and season with Toney Chacheries.Spray a baking pan with some non stick and put Hen in the pan and cover with foil..Depending on the weight cook for 3-4 hours..Use a meat thermometer to check if its done might be the best way to go..For the last 15 - 20 minutes in the oven take the foil off to make the skin crispy..I like baked macaroni or mashed potatoes with my chicken..

    dont know if i can find Toney Chacheries here but can probably find another creole seasoning. thanks
