Squirrel stroganoff w/mushrooms and onions

    anyone with squirrell left should try this one.

    6-7 slices of bacon diced
    2 squirrels cut into serving size pieces 12 pieces aprox
    3/4 cup flour
    2 1/2 tsp dry mustard
    1 1/2 tsp thyme
    1/2 tsp pepper
    1 1/2 tsp salt
    3/4 cup chicken broth
    1 large onion diced
    1/4lb mushrooms sliced
    3tsp butter
    2 cups sour cream 1/4 cup sherry
    minced parsly


    fry out bacon until crisp and remove from pan & save. roll squirrel in flour mixed with mustard,thyme,pepper, and salt. try and use all the mix if possible.

    brown the pieces of squirrel in the bacon grease, about 15 min.

    add the chicken broth and cover, simmering untill the saddle pices seem tender. another 15 min or so. during this time sautee mushrooms and onions in the butter and save.

    when squirrel is done temporarly remove and stirr in the sour cream mushrooms and onions. make sure sour cream mixes well with other ingreadients. add a dash of hot water if nessassary. simmer ofr 5 min stirring but dot let boil.

    now stir in sherry and add bacon pices and squirrel. simmer just long enough for squirrel to be heated again.

    serve extra sauce over noodles. dash with minced parsly.

    well as promised i am posting the pic's. i had this a few weeks back and was astounded at how good it was. i made it again last night so i could add pic's.

    the first three are frying up the chitlens until crisp. bacon ends diced is what i used. browning the squirrel in the fat and one of the browned meat.

    these are simmering in the broth and adding sourcream and sauteed mush,onions. adding sherry and chitlens back to the pan.

    final group is adding squirrel back to pan to warm and the final results. served some remaining sauce over egg noodles.:tounge_out: served with some toasted buttered itialian bread.

    Do you just quarter up them rats, or cut them smaller??? I'm about to clean up around here. Mother in law says get rid of them !!!! probably about 8-12 squirrels out back that need to be cleaned out. Hate to just take an animal out and waste!

    Just couldn't think about how to part them out. The ones we had last year were just Roasted over the grill. A little tough, but , MMMMMM!
    Just got to get the parts for my Daisy 880 to make a harvest!!

    Great. Squirrel is my favorite. We have had a squirrel explosion down south. They are everywhere.
