SOUTHWESTERN EGG BAKE Ingredients: 1# ground sweet Italian sausage (reg. sausage will work) 1# ground turkey (ground beef will work-the leaner the better) 1 large sweet onion (white or yellow would probably work) 2 cloves garlic, chopped fine 1 red bell pepper, chopped very coarsely 1/2 - 1 green bell pepper, chopped very coarsely 2 (4 oz.) cans chopped green chiles 1# shredded cheese (cheddar, swiss, mozarella, monterrey jack, etc.) 18 eggs salt, pepper, & any other spices to taste 1 TBS Dijon mustard Cook sausage and turkey in a skillet till crumbled, well mixed, and no longer pink. Season to taste if desired. Drain and set aside. In a slow cooker, layer the ingredients in the following order: half the browned meat; half of the onion; half of the garlic; half of the bell peppers; half of the green chiles; half of the cheese. Repeat the layers with the remaining ingredients. In a large bowl, break all the eggs, season if desired, add the mustard, and beat well. Pour it all over the layers in the slow cooker. Cover and cook on low for 6-8 hours. Options: Top with sour cream, catsup, hot sauce, or salsa.
