1 gutted carp, and a few veggies placed on a burning 2x4 for 20 minutes. Throw away the carp and eat the 2x4.

Dan, I didnt mean to kill you post. I just couldnt help myself. I have eaten carp and the first thing that came to mind was salmon. I dont eat them, nor do I eat catfish ( unless they are gut hooked). I prefer the little ole crappie for dinner.

I just soak them in icy salt water a day or two and then fire up the smoker. You can also add liquid smoke to the brine, I'd let it go 4 or 5 days, and then finish the fish in the oven on low heat, with the oven door cracked. Just like making jerky, except you will not dry it out as much. I keep my smoked fish in the refrigerator in zip lock bags. I used to have a friend who canned the carp. She added a small amount of liquid smoke to the one pound jars: I enjoyed this very much.

Look above in the member cookbook. There are recipes to smoke fish,I think they would be fine on any fish.
