I like to put a little pappy's seasoning on 'em then cook until almost done then put on some good BBQ sauce on 'em

I send my hams and shoulders out to a local butcher and he smokes them for about a week and a half to 2 weeks. Then he debones them and slices them for me in 5/8 to 3/4 inch steaks. I do this when Im butchering in the winter time. Vacuum pack them and get them out of the freezer when I want them. I sure would like to have a smoker though.

Try soaking them in Italian dressing.

McCormicks makes little packets of seasonings called grillmates. They are awesome for just about any type of meat, chicken, or fish. I butterfly my boneless loin chops about 3/4 inch thick and marinade them in the McCormicks southwest marinade and do them on the grill. So tender you can cut them with a fork. It'll make your tongue slap your brains out!:dribble::dribble: Im getting hungry thinking about it.

OHH Yeah,C.L. Grillmates are the ticket . You can also use a whole bottle of any flavor, mix a 1/4 cup vinegar,1/8 cup light oil. and marinate in a food saver vac bowl for 1 hr or so ,or
in a regular bowl in the fridge for 3 hrs ,Man like you say . It'll make your tongue slap your mouth.

Pork steak and chops are the hardest thing for for me to grill. You have
to be real careful they have almost no fat. You want to get them done.
But if you leave them to long they get dry and tuff. There is not much room
    for error.

I start with a boneless pork loin sliced 1-1/2" thick.
    BBQ on the grill.
Get tired of BBQ, marinate in some teriaki.

Pardon my northerness, :smile2: but what is a pork steak? I've heard of pork chops (rib, loin, sirloin), but never steaks...

My favorite thing to do with pork steaks is get some thick cut chops bout 1 1/2 " thick, butterfly it open and stuff with italian sausage, season with Toney Chacheries and wrap w/bacon then throw on grill..
