piclked okra

    3 1/2 lbs small okra pods
    3 C water
    3 C vinegar
    1/3 C pickling salt
    2 t dill seed
    4 cloves garlic

    Trim stems off okra,set aside
    Combine water,vinegar,salt and dill seed,bring to a boil
    Pack pint jars tightly with okra,adding one clove of garlic either on the bottom or top
    Ladel hot brine over okra,leave 1/4" headspace.
    Adjust lids and can in water bath for 10 min ,pints 15 min for quart jars.
    If hot okra is preferred,Just add a pepper sliced in half to each jar.:wink:

    We have a granddaughter and son-in-law that loves pickled okra, so my mom cans about 20 pints each year for them. I will have to give her your recipe to try.

    Only in America, or is that Southern America Reload, that ya can get such advice on that universal vegetable? Okree. LOL.

    If ya throw in a stem of Goldenrod it makes it look pretty too.

    I used to pickle okra and I love it, but have had a hard time the last several years getting it to grow in my garden. The soil is bad, okra seems to be picky about where it will grow well, and a test should be done to see what we can add to improve it. Your recipe is going in my collection though, thanks for sharing it.
