What is the lightest tackle I should go for when fishing for 1-5lb channels cats?

Depends on what you want.....to get them in most every time or an ultralight fight. Also depends on the structure you're fishing if you gotta get them out of snags etc......

Catfish aren't line-shy so use what you want.

spinning tackle and 10# test. if there are no snags then go to 4# for the fun of it.

1 to 5 pounders id say 10 to 15 pound mono would do the job fine.

As mentioned above, depends on if there are any snags. I use a lil 5.5 ft uglystick pro lite and have hauled in 10# + channels on 6# line for the fun.
