new catfish recipe

    Well last nite the wife and I decided to bake some catfish ,never found any recipes we thought we would like. So we made one up,first we got out the following:
    6 med sized fillets
    2 pkgs of ranch dip mix
    1 Tgarlic powder
    1TMcKormics grillmates seasoning[mesquite]
    salt
    fresh ground black pepper
    1 can of diced tomatos with green chili

    spray baking dish with olive oil cooking spray
    mix all seasonings except tomatos
    sprinkle fillets with seasonings,and place in baking dish.
    Cover with tomatos
    bake at 400* for 15-20 min or till fish flakes.

    Sorry no photos,It was pretty good,tho and the wife hates catfish[grew up eating it 3 meals a day] Said I can handle eating it like this:cool2:

    rich long as we been friends i never knew you to ruin good fish.only recipe ya need for fish is salt pepper,corn meal and lake crisco.

    Hey, Reload, have you ever tried baking it with Italian bread crumbs? I like to dip it in beaten egg, roll it in the bread crumbs and run it in the oven and bake it. You're recipe sounds great!:roll_eyes:

    Oh, Richard, sorry, Debbie's Italian bread crumb baked fish got my mouth to waterin and distracted me....

    ......my middle daughter dated for a short while (and I think about this boy alot) an up and coming chef who was at that time attending a chef school in one of the Carolinas. He caught several eater channels from my pond one day and asked me how I wanted them cooked. I told him to surprise me and I cleaned the fish while he rummaged around in the kitchen for whatever.

    Anyway, he put the fillets in a casserole dish and covered with fresh chopped veggies of all kinds and dumped an entire bottle of Italian salad dressing over that, and I think that was all, and baked in the oven and man! it was good! I've never tried to duplicate it, probably because Tina likes fried or grilled, but someday I may try to.
