Mustard Crappie

    My favorite Crappie recipe is as follows:

    yellow mustard
    buttermilk
    eggs
    cornmeal
    japalenos
    salt
    pepper

    take 2 eggs in bowl and beat. Add buttermilk and about 1/4 cup yellow mustard and stir.

    in another bowl, mix cornmeal and salt and pepper.

    While you are doing this, get out your deep fryer and add oil and about 10 canned japalenos to the oil (the japalenos will turn black, leave them in.)

    drop whole crappie or fillets in the egg/milk wash then roll in cornmeal. Deep fry, (fillets are done when the float to the top)
