Mackereal Dip

    ican't beleive that out of the thousands of members on here we hardly give out many recipes....
    what i'm looking for is a recipe for seafood type dip with mackereal in it or king fish either or....thanx for any help....

    Mackeral Dip
    2 Mackeral Fillets
    1 Onion
    2 C. Sour Cream or Salad Dressing
    Your Choice of Seasonings

    Poach the Mackeral Fillets and let cool. Once cooled, remove the skin. To make a smooth dip, use a blender to puree the meat and onion. This puree can be added to sour cream or salad dressing. Add spices of your choice (dill, Cajun, or whatever u want).

    If you want chunky spread, chop onions and fish into size you prefer and add to sour cream.

    225g (8oz) ‘ready to eat’ smoked mackerel or kipper fillets, fresh or defrosted skinned
    115g (4oz) fromage frais or natural yogurt
    2 x 5ml spoon (1 teaspoons) creamed horseradish
    1 x 5ml spoon (1 teaspoon) chopped dill or parsley
    pepper

    Serves 6-8

    NUTRITIONAL VALUES PER PORTION (APPROX) 108-81 Kilocalories;
    9-6g Protein; 8.6g Fat; 1g Carbohydrate; 0g Fibre

    Smoked mackerel is one of the most versatile fish. Herb, pepper and garlic versions are also possible, just replace the horseradish with one or more or these ingredients.
    Method


    Roughly flake the fillets with a fork or wooden spoon.

    Beat in the remaining ingredients until well blended.

    Serve with tortilla chips, bread sticks and chopped raw vegetables or spread on savoury biscuits

    I have to stop reading this thread. I just cant stop drooling. Now I am going to have to buy some mackeral and try these recipies.

    My boss does a smoked fish "dip" (more like a spread, really). He just does the fish in a smoker, skins and boes it, then mashes it with a fork and mixes in a bit of mayo or such - just enough to moisten.

    Serve with crackers.

    Uuuummmmmmmmmm.
