Little help with BLOOD

    can some one point me in the right direction for doctoring blood. I have a source just dont know all the steps to the process.

    The way I was taught . You catch it in a five gallon bucket,cover with cheese cloth and sit in a cool place to congeal. after it sets up, gently pour off the liquid. Then VERY gently turn the bucket up-side down on a cutting board and ,using a fine wire ,like a guitar string pull through the blood about every inch or so. As you cut place each slice back into the bucket, covering it with a good amount of brown sugar and garlic salt, do this with each slice till your done. Next cover with cheese cloth and let set about 2-4 days ,and drain off the juice that forms . Turn bucket over onto cutting board and re-place slices as before . do this each few days till its the toughness you prefer. then cut into bait sized chunks and refridgerate till you need it.
