There not all catfish and I couldn't find the "other fish species" but went to Texoma this weekend with some guys I went to college with and caught stripers and blue cats. Ended up with 102 stripers and 28 blues this morning. Caught the blues at the dock after we started cleaning our fish. We would put a piece of rib, skin and fillet of the striper and lower it to the bottom. They were stacked up under that dock. Biggest caught was 42 pounds.

Lake Texoma was my favorite place to stirper fish in the mid 90's. When I fished it you were only permitted to keep one over 15 pounds due to flooding conditions washing the larger one over the dam. We hired a guide by the name of Charlie every time and caught the limit, plus plenty of what they called sandies. When we were cleaning the fish, we could see the blues out from the dock churning the water to get guts, etc. We didn't have nice meatal cleaning tables like the ones you showed. You; might wonder why a NC native is fishing in Texas, well my brother-in-law lives in Plano.
