Jerky Recipes

    I got a few jerky marinade recipes put together for you that have been asking,If these aren't quite what your looking for,just holler at me and I'll try to find some more to your liking. I have several jerky and sausage making books in my home library.

    I'm sure most are familiar with the slicing process so I'll just omit this and post the recipes.

    Marinades: these are all for approx 5 lbs of meat . Marinade in the refridgerator for 12 to 24 hrs.

    New York style

    5 t salt>>>>>>>1 finly chopped onion
    1/3 C worcestershire sauce>>>>>>>>>>>1 t black pepper




    Ohio Style



    5 t salt....................1/2 C worcestershire sauce
    1 1/2 t black pepper ...........1/2 C liquid smoke
    5 cloves pressed garlic



    New Mexico Style

    3 1/2 t salt.............5 cloves pressed garlic
    1 1/2 T black pepper.........3/4 C soy sauce
    1/3 C brown sugar...........1/3 C worcestershire sauce



    Tex Mex Style

    5 t salt.............5 t dry mustard
    1 1/2 t black pepper............1 C brown sugar
    1 1/2 t cayanne pepper........1 1/2 C red wine vinegar
    1 finely chopped onion..........1 C catsup
    5 cloves pressed garlic


    After marinading for the specified time let meat drip dry before drying in a dehydrator, oven or smoker jerky is done when a piece [when cool] will just break when bent in half.Store in cool placein air tight container.
