Japaleno Cornbread

    There is nothing like red beans and Japaleno cornbread.....here is what I use.....

    1 cup yellow cornmeal
    1 cup flower
    Salt
    Pepper
    Sliced Japelenos (either fresh or canned, I prefer canned)
    optional (canned corn, drain)
    1 cup milk
    1/4 cup bacon grease
    2 eggs

    mix dry ingredients, add milk and bacon grease, beat eggs prior to adding to the mixture. Then stir in as many japalenos and the corn if you are using it, as you want. I put in the over at 350 until the cornbread is firm, then put it under the broiler to brown the top.....
