Italian Baked Chicken

    This is a simple and healthy way to put a little different spin on baked chicken.

    Italian Baked Chicken

    3 large boneless, skinless chicken breasts
    1/4 Cup olive oil
    1/2 tsp salt
    1/4 pepper
    1/4 tsp garlic powder
    1/2 tsp oregano
    1 Cup Italian style breadcrumbs
    1/4 Cup parmesian cheese

    Cut the chicken breasts into cutlets by cutting lengthwise through the side of the breast. Cut each cutlet in half.

    In a small mixing bowl, combine olive oil, salt, pepper, garlic powder, and oregano. In another bowl, combine breadcrumbs and cheese. Dip chicken into olive oil mixture, then coat with bread crumbs. Place in shallow baking dish and bake at 350* for 30 minutes or until juices run clear and chicken is no longer pink.
