Hush Puppies

    When I make hush puppies, I use the left over cornmeal, I have rolled my fish in.

    Here is what I use in the mixture.

    Cornmeal
    Salt
    Crushed Pepper Corns
    Cayenne pepper
    Garlic Powder (Small amount)

    If you dont have enough left over after frying the fish just add to it.
    Some people use milk in their hush puppies, I do not. I add whole eggs, until the cornmeal mixture is pasty. I then add chopped Celery and Green Onion.

    A teaspoon of the mixture will make a golf ball sized hush puppy. I use the same oil as I fry my fish in.

    What, no chopped jalapeños?


    I cheat and use Shawnee Mills Mexican Cornbread mix for hushpuppies.

    I do add fresh finely diced jalapeños, onions and cheddar cheese to the mix.
