I've been making Hush Puppies for years. At a recent church fish fry one of the ladies made them from the following. Pretty much the same as my recipe but tasted great. Don't get the batter too thin.

I would like to see some other recipes. I've thought about adding Jalipino peppers....anyone try that?

    Hush Puppies
    3 c. corn meal
    1 1/2 c. flour
    3 T. baking powder
    1 t Salt
1 small to med onion - chopped
    2 t. sugar (opt)
    2 c. milk
    1 egg

(If I use self rising meal & flour I omit - baking powder & salt)

Mix dry ingedrients, add onion, egg & milk
Stirr and drop into hot grease about 300 degrees

Thats real close to the recipe I use but I don't put sugar.

Also, LOTS OF ONION is the key. Too little onion and they taste like........ well, you know!:confused2:

All very similar to the recipe we use. Yes, the jalapeno is very good mixed in the batter. I just don't like overkill on the peppers but thats everybody to his own taste. Another good thing is to add some canned whole kernel corn. About one can with a large batch of puppies. Just be sure to drain the corn or adjust your liquid accordingly, or like you said your batter will be too runny. This is making me hungry.

    INGREDIENTS:

    2 cups self rising cornmeal
    1 cup self rising flour
salt and pepper to taste. Guessing I use a 1/4 teaspoon
of salt and about 2 or 3 teaspoons of black pepper
    one egg
    2 onions chopped fine.
    Dash of garlic powder
And add hot green chopped peppers to your taste.
mix all together. Mix well and the mixture should be stiff and not runny
And add beer or milk if it needs some liquid. But not very much.
If your onions are wet it will not take much liquid.
Enjoy and Hope they turn out for you.
Deep Fry in Peanut Oil at approx 375 degrees
