My wife wants to go horse back riding, so I told here that it would have to be somewhere that I could fish. I would appreciate any info.

There's plenty of catfish in Ft. Gibson. We are getting into the spawn time for those blues and they will be heading to the upper ends of the lake and especially up into river channel. Chouteau Bend/Mazies Landing area will have plenty of blue cats heading up the river right now and for the next month or so. I don't fish the main lake but the Grand/Neosho river that feeds Ft. Gibson is where I would be fishing especially with such a wet spring. The rains will keep driving the fish upstream.

There's plenty of shad....look in coves, points and creeks and focus on wind blown shores like any other lake.

You might want to check before you drive down to Gibson. The lake is about 12 feet above normal for now.
