After you get the Gar cleaned real good, soak in salt water over night. In at least 1 inch of cooking oil at 350 degrees fry steaked pieces of Gar about 1 inch thick. Add several pieces of rubber boot cut into bite size pieces. When Gar is tender and flakey, throw it into trash and eat the rubber boot.
    This is just my opinion.

we would clean them cut up in pieces and the presure cook . This would make sure that all of the bones up messed were soft and eatable. Then season the you want ,make patties and fry. That is the same way we do it today. Hope that will help.

I have always split open the back and peeled the boneless meat from both sides of the backbone. We would then cut this up and fry it just like catfish.
