Most people fillet the fish. I work at a fish market and that's the way most everyone gets theirs cleaned. If you want you can even cut the pin bones out of the center of the fillet and you will have no bones at all in the meat. Also if you want to try this, you can save the skeleton and fry the crap out of it and it's kinda like a fish chip! It's actually really good, I like flounder like that. I haven't eaten much shad, but I hope this helps some.
