Homemade Pickled Okra

    Has anyone here made their own pickled okra? I have tried several times, but mine always comes on slimey. Any ideas????

    I dont know why yours is slimy ,you might have left it in the water bath too long,I had some do that only once ,I make a real mean okra pickle.

    I have never pickled my own, but my dad always did it and they were the best thing. Even my daughter loved them when she was little. They always turned out slimy but no one ever complained. They were just too good to even care.
    We ran out several years ago and he's to the point to where he can't do much anymore. I need to get his recipe and when I'm able to grow some I'm going to make some.

    I'm fixin to have okra runnin out my ears. Is it hard to pickle? I love it but don't know how to put it up.

    Hot pickled okra

    3 1/2 lbs ,small okra pods
    3 C water
    1/3 C canning salt
    3 C vinagar[I like cider better than white]
    2tdill seed
    4 cloves garlic/peeled
    two small hot peppers to each jar

    carefully trim stems off of okra,being carefull not to cut pods. ,set aside.

    combine water,vinagar,salt ,and dill seed. Bring to a boil.

    pack okra pods in jarstightly,with 1 clove of garlic and as many peppers as desired into clean sterilized jar

    ladel hot brine into jars over okra,leaving 1/4 inch of headspace

    remove air bubbles
    adjust rings and lids

    process 15 min. in boiling water bath

    yield: about 4 pints of heaven

    Thanks so much for that!! I love pickled Okra and that's EASY to do! Wow who'd a thought it :eek:oooh::smile2::eek:oooh:

    I tried to rep you for it but it telling me to pass some around first...LOL.

    I've never tried okra, not afraid to just never have. Not to popular out this way I guess.
