Green Chili Stew

    2lbs lean meat, Beef round or pork
    2T oil
    3 med potatoes,diced 1/2" cubes
    2 cloves garlic,minced
    6 green chili peppers,roasted,peeled,seeded, and chopped
    1/2 t oregano
    2 t salt

    Cube meat,salt and brown in oil
    Add rest of ingrediants,and add just enough water to cover
    Simmer till potatoes are done[30-45 min. adding more water if necessary]

    adjust by adding ,or decreasing the amount of green chili New Mexicans like it hot!!
    You can also brown meat and place all ing. in a crock pot to cook all day.

    Ground beef or pork may be substituted ,if desired.
