Got me a hog yesterday! Yahoo!!!

    Got my first hog yesterday! It sure was cool it dropped right there didn't have to go find him. I sure was excited! I BBQing (smoking) the ribs today!

    Thanks! Dinner is now! I just took'em off the grill as you can see in the pic I was already picking at it before I got it in the house.

    i saw 5 late saturday and did not get a shot. i will be back after them on thursday. if you do your own processing make some into boudin. it is easy and the wild hog works great. also, congratulations on 100 posts.

    congrats on the hog!! Did it come from granger?? I would also like to know why do you have to freeze it 24hrs? This is the first time I heard this?? Freezing don't age it, it takes like 34-40 degrees to age meat.

    I am not sure why your suppose to freeze it? But, I am still alive after I ate the ribs and they were yummy! I have not visited Granger yet. It is bow hunting only there, I do plan on visiting this year though.

    Congrats on the kill brother, that looks like some fine smokin you did there!

    They are starting to make their way in to Iowa, if I see one he is MINE!!!

    I got one last year, found it the next morning (in the middle of summer) I was worried about the meat but ate it anyways. It seem like every time I ate it I got the chitts, I just called it my dietary hog! I get the chitts when I go to hooters and eat there wings, but still go! I didn't notice until my son mentioned that is why he don't like Hooters wings!

    There are all kinds of micro organisms that reside in hogs and bear meat( and probably many other meats) that can give you the chits, or even kill you if not taken care of ..
    Most if not all are killed when cooking and reaching an internal temp of 160 ...That is kind of a rule of thumb.

    Now for the freezing , and why ?
    Freezing kills many of the same things but is no substitution for properley cooking...
    Some say 10 degrees for 10 days or 0 for 4 days...I have heard many numbers...So take it for what it is worth...my big upright freezer i keep at -20 degrees ..and keep kingsford briquets scattered around .
    That keeps all my meat tasting fresh for a really long time.

    The only things that gave me the runs was a Snapping turtle that i deep fried like a chicken ...
    Couldn't shake it 4days with a fever and upchuck..Went to the Doctor

    Found out that you must treat them like pork also.

    Some say, what the heat don't kill the freezing will.
    Better safe than sorry
