Got fresh red snapper. Need recepie

    Got 2 large fillets of red snapper this weekend, but ive never cooked snapper before. Anyone have any good recepies for it???

    Preheat broiler.
    Lightly brush broiler pan rack with oil or spray with olive oil spray.

    Brush or rub the skin side of the fillets with a little olive oil then lightly sprinkle with a little salt and pepper and seasoning.
    Place fillets, skin-side down, on the broiler rack.
    Season the top with salt, pepper, Cajun seasoning, and drizzle with a little more olive oil.
    Place the fillets under the broiler, about 5 to 6 inches from the heat, and broil until the fish is done or starts to flake, about 10 minutes. Serve immediately, with Creamy CocKtail Sauce. or Maybe some Sherry cream sauce, or a lighter fruity salsa.

    Simple is best for us when we aren't searching for variety because we have so much to get rid of..
    Wonderful flavor and I just love the texture of Red fish after being Flamed just a touch. Tough to tender and sweet.

    My favorite way to fix any sea fish is simple and good....

    Mayonaise
    Lemon
    Salt
    Fresh ground pepper

    Filet fish and leave skin on one side (Scale fish).
    Then squeeze lemon juice over filets. Use knife and spread 1/4 inch layer of Mayo over filet, salt and pepper to taste. Place filets skin side down on cooking sheet (may need to spray with oil in it is not a non sticking pan). When filets flake fish is done...
