goose sausage recipe

    Tim,I don'y have one,But I would use any venison recipe and just substitute goose meat for the venison. I make jerky with it all the time its great.

    i make jerky with a lot of it and have made good breakfast sausage with it but was looking for some snack stick type recipe but im sure your right just use a deer recipe and use goose instead thanks for the reply

    if you were going to make a snack stick type sausage with goose or deer would you use beef or pork fat

    Tim,
    I know its not sausage but here is a Goose Jerky Recipe if you are interested.

    Goose Jerky
    2 Lbs goose breast (Slice it thin)
    1 c. Teriyaki sauce
    1 TBS Tabasco sauce
    1 TBS liquid smoke
    1 TBS Tabasco sauce
    1 TBS black pepper
    1 TBS garlic powder or 1 or 2 cloves crushed fresh garlic
    1/2 TBS meat tenderizer
    1/2 TBS Mrs. Dash Seasoning
    1/2 TBS Crushed Red Pepper

    Mix everything together well and pour into a gallon sized Ziplock freezer bag and add goose breast. Expel the air and seal the bag, making sure all meat is covered in marinade.

    Refrigerate overnight.

    Next day, take the goose slices out of marinade and discard marinade. Place goose slices in a dehydrator or smoker and cook at a medium temp until jerky is dry, but not crispy.

    This tastes better than any you could buy at a store!

    Note:
    Recipe can be doubled or tripled with no problem.

    Tim,I think for a snack stick,I would just grind up the goose meat and add the spices,I wouldnt add any fat,I have an Eastman jerky kit ,I think this year I'll mix some of the cure with goose and shoot a batch of snacksticks.

    Ive alway stuffed duck,goose with sauerkraut and it came out awesome, maybe add some of it to the mix with some fennel seed. I aint a chef but know what I like.
