Fruit Pizza

    This is a refreshing, cold treat, on a hot summer day. I usually have enough fruit to make 2, so I purchase 2 of the Sugar cookie doughs and cream cheese, while I am at the store.

    Fruit Pizza

    Pillsbury sugar cookie dough
    Pat out and bake.

    Filling

    1 8oz. cream cheese
    1/3 cup sugar
    1 teaspoon vanilla

    Mix and put on cooled cookie dough, arrange fruit around the dough, put in fridge or freezer to chill, while making the glaze below.

    Fruit

    You can use most any fruit that you like, but these are the ones, I use most of the time.

    Kiwi
    Banana
    Strawberries
    White grapes
    Blackberries
    Raspberries
    Pineapple chunks (drained from a can, usually)
    Blueberries
    Peach slices

    Lemon Glaze

    1/2 cup sugar
    dash of salt
    1/2 tablespoon of corn starch or flour
    1/2 cup water
    1/2 cup orange juice
    2 tablespoons of lemon juice

    Mix dry ingredients in sauce pan. Pour liquid in gradually. Cook over med. heat. Boil 1 min. Let cool.

    I have found that the glaze is enough for 2 pizzas, so unless you want a soggy pizza, only use half of the glaze.

    Pour over pizza and cool. I usually put one in the freezer for a little while and one in the fridge. They are delicious really cold, and they won't last long.
