Is there a way to freeze shad so it's not mushy when you use it?

I vacuum seal mine and it stay good. When you catch your shad keep them cold. I have an ice chest that a 3 gal bucket will fit down in and I pack ice around the bucket and put the shad in the bucket. As soon as I get back home or to camp I vacuum seal them and freeze them.

We did some lately.with the food sealer.....
They seem to do great when ya first start to use them but as they thaw out they get mushy...
So I would suggest freezing small portions at a time. Taking one bag down keeping the others frozen til needed....

I have tried many different ways of freezing shad including vacuum sealing. I have yet to find a way that works, if you do let me know.
