    I always left the rib bones in becouse I always lost to much meat trying to get them off..now ive got to get out and catch a few to give this a try...

    Not much ,but great eatin,non the less. I have been filleting all my scale fish this exact same way for almost 40 years. I first learned how from my Grandpa at the age of 7.

    Gills are easy compared to catfish. Even the really small gills are easier than a large channel.
