I have looked at some of these to hold big flatheads during an upcoming tournament. Is a vinyl-coated polyester mesh one a good choice? I want to make sure to get the best one that is easiest on the fishes skin. Thanks...

Why not make a livewell? You can make them fairly keep and they would be much better on a fish than putting them in a decoy bad which I would never do but thats just me. You can make livewells out of coolers even. You can make them cheap or elaborate. Just my opinion tho.

The decoy bags work great in moving water, not as well in still water. Some of the folks that fish tournaments all the time use them instead of livewells.
I have fished with folks that use them, but they are like a stringer........gotta remember to bring them in when you move..... lol
