I would poke them through with a knife a couple times and use them whole, the poking will help release the "juices". I know of a couple spots where the things roost and nest up under a river bridge, I have seen catfish take the babies that fall out of the nests and into the water. In this case any predatory fish in the water will take a bird that hits the water. I have also seen a catfish take a dead smelly rotten bird out of a debris pile in a backwater eddy before on the river,there were all kinds of trash and stuff floating and a dead bird too,actually watched a channel cat come up from underneath and grab it then haul butt for deeper water. If it is edible and in the water chances are a catfish will eat it.
