Curing Chicken & Beef livers

    What are your best techniques for curing livers, both Chicken and Beef? I just mix a while thing of garlic salt with mine and then set them out in the sun on a piece of foil in the grass. I poke holes in the foil to let the juice drain.

    Any other ideas?

    As you said.. use that garlic. Should be a nice addition.. its what a lot of old timers did.

    I pretty much do it the same way. but I put foil on a old cookie sheet,cut them to size then put on a heavy dose of garlic salt or powder, then I completely cover in salt.Then put them in the sun outside wait 3-4 hours then flip and regarlic and salt for another 3-4 hours. I put mine in mason jars and I still have some from 2 months ago and is still as fresh as the day I put them in:wink:

    I use chicken liver and garlic with the most stank cheese you can find...put in panty hose for hookn it and put in large coffee can one morning until night then use worked for me nasty stuff but good
