Cheeseburger Cornbread

    I make this for the kids, it is pretty simple and actually pretty good.

    1 lb hamburger
    2 cups shredded cheddar cheese
    1 onion
    1 cup flour
    1 cup cornmeal
    1 cup milk
    1/4 cup oil
    2 eggs
    salt
    pepper
    (optional peppers, mushrooms, bacon)

    Fry hamburger and crumble. Mix flour, salt, pepper, cornmeal, milk eggs, oil. Chop up onions, and add hamburger onions and cheese to the cornbread mixture. Bake as you would cornbread.

    I like to take and spread the top of mine with mustard, the daughter like catsup on hers, serve with pickles and tomato. You will be surprised how much it tastes like a cheeseburger.

    Hey over here, we eat in a chow hall and the food really isnt that good, so I have a lot of time to think about all the food I use to fix at home, and how I prepared it. Believe me I have saw a bunch of recipes that come off this board, that are on my schedule for eating in Dec when I do go home.
