Catfish gone bad?

    I have some fillets in water I caught yesterday. One was a channell and one a flattie. Well two of the fillets firmed up over night and two didn't. Are the soft fillets flattie and the firm channel? Or am i in for a real bad stomach acheing?

    Patrick, i can't answer your question but a ol timey suggestion is if in doubt, rince with apple cider vinegar an it'll kill any bacteria. then cook!

    Channel cats usually have a yellowish strip on the top of the fillet and its probably theflathead meat thats still soft.

    The one had a yellow stripe down its top side. That one was firm. I cut the stripe off? The other was the first flattie I have gotten my teeth into, man was that the better fish. I'm hooked on flattie for sure. Been fishing west alton mo. I ate both fish and feel fine. Last night some dude from texas fried up a bushel basket full of crappie. Had that and fixins with fresh strawberries out of the yard. I think I am getting the hang of this now.
