Carp Meat for The Win

I went fishing with a friend yesterday. He caught 2 nice channels on some hotdog concoction. I was using Shad, caught with my cast net and meat from a carp that I caught on rod and reel shortly after we arrived. I ended up catching 6 channels. The largest was 27 inches caught on a chunk of cut carp. He gave me the two he caught, and I ended up with 5 quarts of catfish chunks. Some bowfisherman came by and gave me 4 small carp after we helped them load their Jonboat back onto the trailer. I got those scaled, filet, and in the freezer for future fishing trips. It was a good day.

Speak softly and carry a big stick, is that a glock? Cut carp is a killer bait.

Sorry, I'd like to know how to cook them myself. I just can't get over the red look of the meat. A friend said that carp is delicious when the meat is smoked. I don't know.

Kinda’ off topic but years ago, my old German neighbors were real carp fishermen. They waited until the carp and buffalo were running up at Gavin’s Point on the Missouri. The carp get so crowded in there it looks like you could walk across the river on their backs. About 4-5 of these old Krauts would take a couple of old pickups and put 6’ long stock tanks half full of ice in the trucks. They would take those along with their heavy snagging rigs and fill those tanks with carp and buffalo before the sun was too hot.
The butchering and processing was an assembly line of elderly German housewives and farmers. The carp were soaked in brine and vinegar from a local orchard. They had built a smoke house out of corrugated steel from the steel mill and they used apple wood from the same orchard that supplied the vinegar.
The end product tasted like really sweet and smoky ham but it took effort to eat, having to pick out the bones and peel the meat off the hide . A big slab of their smoked carp, a little lemon juice and tartar sauce and a lot of beer made for a pleasant winter evening.

Several ways to cook carp, this is my version.
This is for carp from southern sandy or rocky bottom lakes/rivers.
1. fillet, cutting thru rib cage, cut fillet from skin, cut rib cage out, set aside.
2. Pressure cook (see cooker directions)
3. Make cooked fish into salmon patties. My testing on friends, preferred carp patty to salmon patties.

Ribs. Put in smoker with apple wood, when done, remove from smoker, pull rib bones while fish is hot. No Y bones in rib meat. Enjoy.

If muddy water, put in fresh water with some oatmeal as feed for 48 hours to help flush the mud taste.
Note, I have never removed the dark strip on carp, white bass or stripers.

There is a line that I can't cross. And Carp is on the other side of it . I have eaten it smoked but just can't bring myself to put a knife to it.

bleed a carp out when you catch it as the red meat will not be so red, unless you are using it for bait.
Do the same for blue cats if you plan on eating them.

I've literally canned at least a thousand quarts of carp in my lifetime,they eat better as croquettes than that store bought canned salmon.
