cabbage and beef dish (diabetic)

    1. 1 lb. extra lean ground beef
    2. 1 medium onion (chopped)
    3. 3 cups caggage (shredded)
    4. 1 can tomato soup (undiluted)
    Brown ground beef and onion. Drain and season to taste. spread in baking dish. Top with 3 cups cabbage. Pour tomato soup on top and cover. Bake at 350 degrees for 1 hour. 6 servings

    This is taken from the Diabetic Four Ingredient Cookbook. It taste a lot like cabbage rolls without much trouble.

    Jan, that sounds quite similar to a skillet dish my mom used to make while we were growin' up. It also had shredded carrots added, and used tomato sauce instead of soup I think. Thanks for the post.
