I use the following recipe to beer batter, shrimp, Onion rings, Okra, squash, and potatoes (If you are going to do potatos, let them cook with out the beer batter first, then dip them in after cooling down). beer (any brand) self rising flower cayenne pepper salt crushed pepper corns hot sauce The amount of flower depends on how much you are deep frying. I usually start with 2 cups, this pretty much works out for 1 12 oz beer. Add beer to flower mixture, and use beater or whisk, until all the lumps are gone. Add hot sauce to your liking, and then the salt an pepper. I deep fry everything in 350 degree oil. Shrimp 2 minutes max.
