Whats grilling
We had a thread during the winter on what was for dinner.There was some great food being cooked
and and lot of recipes being shared.
So after last weekend and all the grilling and smoking going on thought i would see what we all fix during
the heat of the summer.
For me we do a lot of grilling and smoking outside to keep the heat out of the house.Plus it seems we just
like to cook more simiple meals and a lot of them are pasta and salads.Lots of fruit salads also....
Here a list of what we do alot of on the grill,Chicken,steaks,pork chops,kebobs,grilled fish,burgers,brats
Stuffed portabella mushrooms stuffed peppers,grilled corn for a salad.And gallons of sweet tea.
But after a while we run out of ideas so looking for some help.
What's for dinner guys...??

I will be throwing some stuffed mushrooms and on the smoker here in a bit. They are soo good!

Hobos,...hamburger, corn on cob, new potatoes, carrots, onions, mushrooms, garlic salt, pepper, butter. Wrapped up in about three layers of aluminum foil, and throw it in the coals for about 45 minuets.:good:
Pizza on the grill. Frozen or home made. Works best on a stone.

Pheasant, quail, goose and duck. (but only because I don't turkey hunt and quit deer hunting)
oh yeah, and Ribs.

anybody willing to share a recipe for grilled catfish? that sounds really good and would be nice to get away from always frying fish. i grill tilapia by wrapping them up in aluminum foil with lemon pepper, butter, and slices of lemon. i guess i could do the same with catfish filets. besides that i just grill chicken and sirloin steak mainly.

Just use the spices you mentioned (yeah, lemon pepper...) and set it on some alum foil with the top open, just off of coals (indirect heat) and put some wood on smoke to it. Fish take smoke pretty well, so if you REALLY like smoke flavor use Hickory or Mesquite. Apple, pecan and oak are a little milder. One way to keep the flames down is to wrap the chips in alum. foil and poke some holes in it with a fork. It keeps it from flaming up, even on a gas grille. I sometimes assume I am the last guy to hear of a old trick like that, so I usually keep my mouth shut, but my Dad (been grilling for 50+ years) hadn't heard of it, so maybe someone else hasn't.
BTW, my freaky "health nut" daughters love it this way.
Personally, (probably speak for my sons too) fried with beer batter is HAAAAARRRRD to beat.

Duck, goose, venison backstrap, and shrimp get grilled alot here. I love grilled shrimp. Grill alot of fish too, mainly drum. Channel cat I'll marinate in soy sauce for a few minutes and sprinkle some season salt on it and slap it on the grill, squirt a little lime juice on it too, tastes pretty good. Another thing I do alot is gut fresh jalapeons and stuff them with cream cheese and wrap them in bacon. Dove breasts sliced open, stuffed with a little sliver of jalapeno and wrapped in bacon with butter on top is another favorite.

Is that drum really good grilled. Never had it before. Friend of mine calls it bubblegum fish because its to chewy.
