    Default stuffed pork loin 1/4

    well last night i wanted something out of the ordnary. steak chicken chops getting old.

    took a 1/4 pork loin and unrolled it with a boning knife by slicing it 1/2" all the way around while unrolling it. making a flat 1/2" piece of pork. started by adding a couple forks of minced garlic and dashing it with mccormick smokehouse black pepper. added a pinch of course kosher sea salt. added chopped bell pepper, onion and button mushrooms. as i rolled it up i shook a bit of J&D'S bacon salt on its exterior.

    popped it in a baking dish. added BBQ rub to the top and some itialian seasoning. put it in at 425 for about 45 min. pulled it out and added some thin sliced pineapple chunks. topped with a mixture of syrup and orang juice mixed thick. brushed it over top and returned to heat. topped with this mix 2 more times about 15 minutes apart. and cooked till internal temp was 180.

    peeled 5 potatoes and boiled and whipped up homeade mashed taters to go with it. not from the box. added that bacon salt to the milk and butter. wow they were good.

    and why in the world did it reverse all my pics? lol.

    Looks great, I was all with ya till ya said pineapple, syrup, I dont go sweet with my meat, cept on BBQ , BUT I can adjust to my likeing, and I will try doin one
