    I guessed it was not so good or more guys would be talkin bout eatin it , I am going to make it a point to
    fry one up this year to see.been wanting to smoke up a coon to, may get really wild and do both this year

    I've never caught a gar, hope to some day tho. I've caught coon 40 years ago, but not lately, would like to cook some of that up too. I haven't had that either. Well, lots of new stuff to try, I don't think the gar in MN are quite as big as in southern states.

    gar deep fried and coon baked or smoked are both good.ive had both and will have them again soon as i catch one.

    I catch gar on my trot lines some times. I batter and fry them just like catfish or bake them with lemon and cayanne pepper. It's good stuff. A little more chewey than catfish but very tasty.

    Most people don't eat them because they are tough to clean if you don't know how to do, and they stil have kind of a bad reputation a trash fish. Youtube.com has a pretty good demonstrational video. The hard part is getting through the armor. Start by laying it its belly on the ground and hold it by the tail with a rag. Then use a machete or corn knife, starting just behind the rear dorsal fin make small hacking movements toward the head. Be careful to stay shallow, so you don't ruin the meat. Doing this until you reach the head will basically open the fish up like a tin can. All you have to do now is peel the skin/armor down on the sides as if you are unfolding a taco, then cut out the fillets.
