How to store cured chicken livers?
First of all, this is a great site and you've all given me some great ideas!
I tried using the search engine to see if this has been asked before and found nothing.
I made a little setup for curing livers (which I never heard of before I came here), with something underneath to put hotdogs in to marinate in the juices that the salt draws out.
What is the best way to store cured livers for a week or so without them turning too hard / brittle to use? I don't really want to wash the salt off unless I have to.

i have kept it in a zip lock bag for up to a month with no problems, just keep it cold., if ur not going to use it in that time i have froze it with ok results.
