    i love eating catfish deep fried is the best way to eat them but blacked is good also

    i skinned and filleted 2.5 lber last night. covered it in zatarains cajun spice, and fried it in olive oil in a pan. Delicious!

    I go out and catch a mess of channels about every other week. I mostly lightly season them, and either bake or grill them. Because I don't heavily season them you can really notice the natural flavor of the fish. I have found that river caught or larger catfish have a stronger taste then smaller cats caught from small lakes.

    Breaded and fried is great. Catfish Stew with potatoes and onions is even better, to me. :smile2: Very popular where I grew up.

    ive got a good recipe for ya. 1/3 flour, 1/3 yellow corn meal, and 1/3 italian bread crumbs. pepper and seasoned salt to taste. then, dip the fillets in a milk and egg bath. bread em, then fry em up. you wont be disappointed.

    I've tried lots of ways but still like 'em best rolled in flour and pan fried. I'll be sitting down to that very meal in about an hour. Took a three pounder this morn. They don't get any fresher. Ain't life GREAT ?

    Love fried, but another way that is really good and easy.
    Sautee- Heat a pan or skillet about 250-300 and put butter in, least a quarter stick. Place fillets in pan then season with salt,pepper,garlic, and I add red pepper for a little kick. Takes about 10 minutes or until nicely browned. Have been doing this for years because its easier.

    I usually have 3 or 4 meals in the freezer and release the rest. When I get down to one meal then I keep a few more to get back to the 3 or 4 meals in the freezer. I eaten catfish a lot of ways but still the best is just fried.
