90% of channels i catch go in the pan. i love a fried whole little booger bone in. but fillet the ones over 18". usually throw back all over 7-8 lbs and all fat females through the spawn.

i fry in cast iron or deep fryer. some i grill in butter and foil but usually save that for bass and less muddy fish. channels taste best with some spicy breading vinigar and salt.

I eat lots of channels. I prefer them 2-5 lbs. I like them fried and blackened. I eat them baked to be healthy but I just don't like them near as much baked.

I fix most of my fish fried in Andys Red, but I have cooked some on the grill wraped in foil with butter, onion, salt and pepper and a little garlic.

I like frying catfish, especially for breakfest, but I like to melt down some better and garlic, wrap up the fish in the garlic butter with foil and let em simmer on the grill. Pretty good:big_smile:. THey say in Ohio to only eat one serving a month, but f-that:angry:, I eat em all the time.

I rarely eat them, but they always go great with some lemon pepper and some rub!
