    one way (a good way to start)Daniel,is to go to your local grocery store & buy a bottle of paulprudhomme's blackened redfish magic &follow the instructions on the back...get your pan scary hot over a blue flame(i like to use my turkey burner outside with a cast iron skillet)butter,the seasoning,thats all.my best friend johnny &i once did a taste test with fresh caught trout,crappie,bream,blue&channelcat fillets,&some flash frozen salmon at a cookin we had.the blackened catfish was the winner by a long country mile. happened at other cookins later.folkes would be waiting at the black skillet with catfish and ignorin the deep fryer with bream,crappie,&cats.(until the blackened was all gone that is:)when your comfort level rises you will add(to taste) whatever you like..yum,yum.
