Is that mainly because of the water levels, or because of the way the fish bite?

It mainly depends on the time the water temperature in the spring fascillitates spawning. As a general rule of thumb though, breeding catfish in Mississippi are "on the nest" from sometime in May until roughly the 4th of July, and aren't too interested in food until then.... unless of course you are fishing extremely close to the nest, in which case they might even bite in defense.

From my experience the month of April and August is when I have caught more 20# plus fish looking back at my logs. My biggest(my son's actually) was mid May this year at 60#. I have also done fairly well in March and April as well as October and November(when I fished instead of hunted). I would try to pick me a time when river was fairly stable and I had some fresh skipjack if I had to pick a time regardless of time of year.
